Preparation

Note: Our Bacon Wrapped Beef fillets are generally 1 ½ “ thick.

For Best results use an instant read thermometer.

135 degrees Very Rare
145 degrees Medium
155 degrees Well done

Suggested Preparation

Stove top:

(note: cast iron skillet works best if you want to make a sauce at the end )

Use medium-high heat, brush the Beef Fillet with olive oil, and use your favorite salt, applying generously to both sides.

Start cooking the beef fillet on its side. We want the bacon to release some of its goodness on the pan. Do this for 1-2 min searing the bacon.


When the bacon is to your liking Sear the Beef fillet 5-6 min each side creating a nice golden to dark brown crust.
Lift gently to make sure you don’t burn the salt crust.


Do this to both sides and reduce heat to medium. Generally for another 3-4 minutes.


Remove from heat and let rest on platter 3 minutes.


Total cooking time depends on your doneness: 12 -15 min generally.


Desired doneness is up to your liking.

Broiling:

Turn broiler to high heat, adjust rack so the top of beef fillets are approximately 4” from the heat source.

Brush olive oil to each side, add your favorite salt don’t be shy, you want the brown salt crust when they are done.

Cook approximately 6-7 min per side.

Use doneness chart above for desired enjoyment.


Grilling:

Cook similarly to broiling instructions, keeping the meat 4” away from white hot coals or gas.
Use a good thermometer when cooking on outside grills, as all grills cook differently and have hot spots.
